HOMEGROWN AND DELICIOUS


Situated in the middle of a working tea plantation, Le Passage Mohkan Shan has inherited a deep tradition of growing its own produce.


We produce three categories of tea-- black, green and yellow-- and sell our own signature Mogan Huang Ya or Mogan Yellow Bud. We also cultivate our own pears, just as China has done for some 3,000 years. In fact, the pear genus is thought to have originated in the foothills of Tian Shan, not far from us.


Since 2007, hotel owner Christophe Peres has been making his own pear brandy using his grandfather's distillation techniques and his traditional alembic, or still. Named after the owner's wife, Poire Pauline is distilled on the premises and available to our guests. It's made from pears collected in August, then mashed and fermented in large clay jars. To ensure the highest quality, it goes through a double distillation process resulting in a delicious dry brandy.


Beyond our brandy and tea, Le Passage Mohkan Shan has begun to develop a wide range of French and Chinese regional specialities, including pâtés, foie gras, rillettes, saucissons, jambons, vegetable preserves, jams and chocolates. Our kitchen staff use only the freshest ingredients, bought locally from organic farms.


Le Passage Mohkan Shan will be rolling out new culinary delights on a regular basis. Our objective is to establish Le Passage Mohkan Shan as a quality label for speciality foods.
